I have a secret. I wish I knew The Barefoot Contessa personally (so does my friend, Katie, but even more so). Her recipes are always among my favorites and she seems like a whole lot of fun. This recipe is adapted from her hummus and veggie salad, but I’ve tweaked it and made it my own. You will love it, especially now, when the tomatoes and cucumbers are so fresh and plentiful. And if you have mint growing in your garden, you’re in luck because this dish is enhanced significantly with chopped, fresh mint. It’s so easy to make. Serve it as a main dish or as a side. This quantity is enough for 3-4 people as a main or up to 6 as a side. So here goes…

Ingredients For Hummus and Veggie Salad

  • 1 large English cucumber (seedless) or one from your garden, unpeeled, sliced and quartered
  • 2 cups of cherry tomatoes, (hopefully from your garden) halved
  • 1 large red pepper, cut into strips and then each strip quartered
  • 1 diced red onion (about 3/4 cup)
  • ½ cup chopped fresh mint leaves (to top your creation)
  • And For the Sauce:
  • 1/3 cup olive oil
  • 1/4 cup fresh squeezed lemon juice (or bottled juice, in a pinch)
  • 1 3/4 teaspoons salt
  • 1 teaspoon pepper
  • Large Tub of Plain Hummus
  • Naan or pita (toasted, warmed or as is) for dipping

How To Make Hummus and Veggie Salad

  • Chop all veggies.
  • Put all veggies in a bowl (except mint).
  • Stir in salt, pepper, olive oil and lemon juice.
  • Allow to marinate for at least 15 minutes or up to 24 hours.
  • When ready to serve, pour hummus onto a large platter and spread out in a thick layer.
  • Using a slotted spoon (THIS IS IMPORTANT) *distribute veggies over hummus.
  • Garnish with chopped mint.
  • Serve with sliced naan or pita.
  • Enjoy!

*If you don’t use a slotted spoon, the excess liquid will make this dish too soupy.
