Ah, Roma: The Colosseum, The Forum, The Basilica, the sidewalk ristorantes and the PASTA! OMG. I am in heaven just thinking about it. It’s a place like no other in the world and the food of Rome is one of the many reasons. One of Rome’s most famous pasta dishes is Cacio e Pepe (pasta with cheese and pepper). It’s practically an institution in Rome, but it’s an easy Roman pasta dish that you can make tonight with 6 simple ingredients.

Cacio e Pepe: A Most Easy Roman Pasta Dish

You can make Cacio e Pepe in 15 minutes from start to finish. It only requires few ingredients, which have long shelf lives, so you can keep them on hand for a month or more for when you need them (except the fresh parsley). And in case you’re wondering, how to pronounce this easy Roman pasta dish it’s: Ca-Chi-O-E-Pep-A. (click the link if you’re an auditory learner, LOL).

Ingredients

  • 12 oz Pasta (spaghetti, bucatini or fettuccine) .
  • Insider Tip: Because I’m a diabetic, I use Carba Nada fettuccine because it tastes great and it’s much lower in carbs. But use what you like.
  • 3/4 Cup Finely Grated Grana Padano or Parmesan
  • 1/3 Cup Finely Grated Pecorino Cheese
  • 1 Tablespoon Whole Peppercorns (Ground with Mortar & Pestle)
  • 3 Tablespoons Unsalted Butter (Divided)
  • Chopped parsley for garnish.

Instructions:

  • Boil water for pasta with a dash of salt.
  • Meanwhile, crush peppercorns in mortar and pestle.
  • Melt 2 Tablespoons of the butter in a large frying pan.
  • Add peppercorn and toast for 1 minute or until fragrant being careful not to burn.
  • Cook pasta for 1-2 mins less than instructions and drain, reserving 3/4 – 1 Cup of the pasta water.
  • Place pasta water in the pan with the pepper and melted butter and bring to a simmer.
  • Add cooked pasta and last tablespoon of butter into the pan.
  • Sprinkle the grated Grana Padano or Parmesean and toss until melted through.
  • Remove pan from heat and sprinkle in Pecorino and toss until melted.
  • Serve with chopped parsley and extra grated cheese of your choice.
