
Ah, Sunday. I love this day, with all its possibilities… and brunch choices. And one of my favorites is a frittata. Fill this yummy egg recipe with just about any veggie you have in your fridge or pantry. Or add some leftover sausage or bacon. It’s kind of free-form breakfast that takes less than 30 minutes from start to deliciousness. So here’s my easy frittata recipe. Hope you enjoy it today, or one day soon…

Ingredients For Easy Frittata Recipe
- 6 Large Eggs
- 1/3 Cup Half and Half
- 1 Cup Grated Cheese (I use chaddar, but mozzarella and swiss work well too)
- 1- 1 1/2 Cups Chopped-Up Veggies (I like things like tomatoes, onions, carrots, peppers, scallons, etc.)
- 1 Cup Spinach or Arugula (optional)
- AND/OR 3/4 Cup Sliced or Crumbled Sausage or 4-6 Strips of Crumbled, Cooked Bacon
- 1 Tablespoon Butter
- Salt and Pepper to Taste

Instructions For Easy Frittata Recipe
- Preheat oven to 400F
- In a cast iron or oven-proof skillet, saute the chopped veggies (not the arugula or spinach) in butter for a few minutes. At last minute, if using the arugula or spinach, add it for a few seconds until it wilts. Remove from heat.
- In a mixing bowl, whisk together eggs, half and half and a pinch of salt until smooth. Add pepper, if desired.
- If adding meat, place in skillet.
- Pour the egg mixture over the veggies and/or meat, distributing evenly.
- Sprinkle the cheese on top and use a fork to distribute the cheese evenly and incorporate a little of it into the egg mixture.
- Bake at 400F for 15-17 minutes or until the edges set and top is slightly brown.
- Slice into 4 quarters and serve with fruit, toast, champagne – you name it!
NOTES: This recipe produces 4, good-sized portions. Bruce will usually eat two quarters, however. LOL The leftover portion reheats well in the microwave for lunch the next day! Hope you enjoy it!
