
My vegetable garden is going crazy. I mean I had to bring cucumbers to the store as a gift-with-purchase-the-other-day crazy. Bruce and I cannot possibly eat the bounty that is currently raining down upon us. I’ve made pickles. And I’ve made so many salads that my hair will be tinting green any minute. One of my favorite things to do with this plethora of vegetables, however, is make summer vegetable pasta. If you have an embarassment of vegetable riches too, consider making summer vegetable pasta one day soon. I think you’ll like it.



Ingredients For Summer Vegetable Pasta
Other than a bit of chopping, this recipe is super easy. Very similiar to ratatouille, you use what you have from your garden, as you like it. I use the following:
- 4-5 Cloves of Garlic, Chopped
- 3 Tablespoons Olive Oil
- 2 Zucchini Squash, Diced
- 2 Yellow (Summer) Squash, Diced
- 2 Peppers (I use green, but any will work), Diced
- 1 White or Red Onion, Diced
- 1 Large Eggplant
- 1 Can Diced Tomatoes, Drained
- Salt & Pepper to Taste
- Box of Cooked Pasta (I use Carbanada, because it’s lower in carbs, but any pasta will do)
Other vegetables that work inlcude mushrooms and carrots. Like I said, use what you have and what you like.

Instructions for Summer Vegetable Pasta
- 1. Place oil in Dutch oven or non-stick frying pan over medium heat and add garlic. Saute until fgragrant.
- 2. Add chopped vegetables, one type at a time, starting with the densest first. Allow each vegetable to soften before adding the next one. In this list of ingredients, for example, I add onions and peppers and cook until softened, then 2 types of squash, cook some more, then finally the eggplant.
- 3. Add salt and pepper to taste
- 4. Stir in the tomatoes and heat through.
- 5. If vegetables are not soft enough for your liking, allow the whole dish to simmer for a few minutes more.
- 6. Serve over pasta with grated parmesean.
