
My cup runeth over. Well, actually, my garden runeth over, if truth is told. At this time of year, so many of we vegetable gardeners have this issue. However, it’s nothing to fret about. Too much of a good thing can still be a good thing because there are so many creative ways to use your vegetable bounty. Tomato cucumber salad is just one of those ways. It’s super easy and quite delicious. Makes a great side dish on summer nights! Read on for the easy recipe.

Ingredients For Tomato Cucumer Salad
This dish is so simple. It requires only a few ingredients.
- 2 Medium Cucumbers, Sliced or Diced
- 2-3 Large Tomatoes, Diced (or 1 1/2 Cups Cherry Tomatoes, Halved)
- 1/2 Medium Red Onion, Diced or Sliced
- 1 Tablespoon Dill (Or Parsley or Basil, if you prefer)
- 2-3 Tablespoons Olive Oil
- 1 Tablespoon Red Wine or Cider Vinegar
- Salt & Pepper to Taste

Instructions
Tomato Cucumber Salad is so easy that I can’t even justify making an instructions list. You literally combine all the ingredients, toss well and refrigerate for at least 30 minutes before serving! That’s it! Yum!
